As for spicy fresh herbs, the most commonly used are basil, cilantro, parsley, mint and wild garlic. There are salads in Georgian cuisine, and you can find a huge variety of recipes for preparing them, but usually Georgians simply serve fresh vegetables and herbs to the table.

The abundance of first courses in the national cuisine of Georgia amazes the imagination of even an avid gourmet. The most famous soups are:

  • Kharcho (prepared on a sour tkemali base with the addition of beef, rice and walnuts);
  • Chikhirtma (this is a rather unusual and difficult dish to prepare; its peculiarity is the complete absence of vegetable grounds; thickness is achieved by adding flour and egg white);
  • Hashi (a soup consisting of beef tripe and leg broth, to which bread soaked in milk is added);
  • Shechamandy (a vegetarian first course, which does not include cereals and vegetables; it is prepared on a fermented milk base, a fruit-sour base and a nut-green base, which is thickened by adding flour).

Second courses are, as a rule, meat dishes, for the preparation of which lamb, beef, pork, chicken, and also offal are used. The most striking example of such a dish is Khinkali. Essentially these are large dumplings, the filling of which is chopped lamb, beef or pork, seasoned with black pepper. Satsivi can also be called a fairly famous second dish. Satsivi is a spicy stew with the addition of poultry and walnuts. Also included in the previously mentioned category of dishes are fried sausages, kebabs and chicken tabaka, which you have probably not only heard about, but also tried!

The variety of sauces in home-made Georgian cuisine is also amazing! There are a lot of them, it seems that you can’t even remember all the names. The most famous are Adjika, Satsebeli and Kindz-dzmari.

Georgian pastries are also quite famous around the world. By the way, it varies depending on the region of the country. For example, in Western Georgia, flatbreads made from corn flour are most common, while in Eastern Georgia, wheat bread is baked. Still, when it comes to traditional Georgian pastries, the first thing that comes to mind is Khachapuri - delicious flatbread with cheese.

As for desserts in Georgian cuisine, they are represented by Churchkhella (nuts in thickened grape juice), kozinaki, pelamushi (thick jelly based on grape juice, which is invariably served cold), bati-buta (balls of corn flakes, sprinkled with sugar syrup ) and quite a large number of dishes, which we can talk about endlessly, because as we noted earlier, Georgian cuisine is simply amazing in its variety of dishes!
