All housewives know that pre-holiday bustle that makes “butterflies fly in the stomach.” Along with other things, on the eve of a birthday (decorating rooms, choosing outfits and setting the table), the question arises - what to cook?!

When someone is planning a holiday, the stomach will also have one, because hostesses prepare various delicacies for any event. Herring under a fur coat and Olivier is, of course, good. But now on the Internet and in culinary magazines you can find hundreds of recipes for delicious dishes for the festive table. In order not to rack your brains about which one to choose, I have made a bright selection of simple and very tasty salads for holidays and for every day.

Menu:

1. Coral salad of crab sticks with Cheddar cheese

This dish can be safely placed at the head of the table. The combination of sweet, crunchy vegetables and tangy sauce complements the zesty cheese. And the decoration in the form of a reef completes the picture. It’s a shame to eat such a salad. But once you try, you won't stop! Before reading, make sure you have something to eat in the refrigerator. After all, your mouth will water, guaranteed.

Ingredients:

  • packaging of crab sticks or meat (250 grams);
  • 2 sweet peppers (preferably different colors);
  • 2 small or one large red onion;
  • a tablespoon of granulated sugar;
  • juice from half a lime;
  • 2 medium tomatoes;
  • Cheddar (or other hard cheese) 200 grams;

For the sauce:

  • 50 grams of mayonnaise (it is better to use homemade);
  • 2 cloves of garlic;
  • classic yogurt - 50 grams (it is also advisable to use homemade one);
  • a teaspoon of powdered mustard;
  • a teaspoon of ground paprika;
  • salt and spices to taste.

For "corals":

  • 90 milliliters of water;
  • flour - 10 grams;
  • vegetable oil - approximately 45 grams.

Step-by-step description of the recipe:

First of all, you need to pickle the onions. While it is marinating, we will prepare the following ingredients.

1. Onions, as I already clarified, it is better to take red ones. It is most suitable for salads both in taste and color. It needs to be cut into thin quarter-slices. If, as in this case, you have small onions, cut them into half rings. Squeeze lime juice here and sprinkle granulated sugar. Mix with your hands to separate each piece.

2. The onion will sit for a while, and we will prepare the sauce without wasting time. Garlic must be passed through a special press and combined with all other products listed in the list for the sauce. Mix thoroughly and set aside.

3. Remove seeds and tail from the pepper. Wash and cut into thin strips. It is ideal to use red and yellow peppers together. They are a great color combination and very sweet, just right for this salad. Immediately pour the pieces into a salad bowl.

4. Tomatoes for this dish should be firm, not overripe, but still sweet. They need to be washed, seeds and liquid middle removed. Chop like peppers and add to them.

5. Cut the sticks into strips and place them in a common bowl.

6. Add grated cheese and pickled onion. Note that the onion has released its juice, but there is no need to pour it into the salad. Season with the infused sauce. Stir and the salad is ready. If you are preparing it for the dinner table, then you can serve it as usual. And for the celebration, I offer you this decoration method, which I spotted on the Internet.

7. Place a springform pan on a plate and place the salad tightly there.

8. Garnish with pepper strips, alternating pieces by color. If you don’t have any peppers left, you can garnish with tomatoes, other vegetables or herbs. It is very beautiful to complement the dish with red and yellow cherry tomatoes.

9. The salad looks presentable already at this stage. Well we have another trick up our sleeve. Combine water, oil and flour in one bowl. It turns out to be a liquid dough. Don't worry, that's how it should be.

10. Pour a small portion of dough onto a Teflon frying pan, without adding oil. It will actively sizzle, so it is better to place a flat sieve on top. Once the sizzling stops, carefully remove the pancake onto a paper towel. If you need another chip, be sure to clear the pan of oil.

11. As soon as the pancake is free of oil, it can be broken into several pieces and used to decorate our dish. It turns out very beautiful.

The salad can be immediately brought to the table. If you prepared it in advance, store it in the refrigerator until guests arrive.

2. Festive salad with chicken “Hedgehog on a mushroom meadow”

This dish will be a tasty and original addition to a children's party. In fact, the composition of the salad can be anything. Elementary, Olivier or regular crab salad you can decorate in a similar way. But I suggest preparing it according to this recipe. The combination of chicken, mushrooms and cheese, plus Korean carrots, is simply a fantastic taste.

Ingredients:

  • 2 chicken thighs or one breast;
  • 100 grams of hard cheese;
  • 100 grams of fried mushrooms (you can fry any);
  • 200 grams of prepared Korean carrots;
  • mayonnaise;
  • olives (several pieces);
  • greenery;
  • salt and pepper to taste.

Step-by-step description of the recipe:

1. Boil the chicken in salted water and cool. Cut into small pieces.

If you are in a hurry to prepare a dish quickly, then cut the hot pieces with a fork and knife, and then distribute them on a plate. This way they will cool faster.

2. If you have long Korean carrots, then you also need to chop them so that the straws are 2-4 centimeters long.

3. Cut mushrooms, for example champignons, into cubes and place in a dry frying pan. Reheat and reduce heat. As soon as the liquid is released, simmer under the lid on medium power for 5 minutes. Then remove it and wait for complete evaporation. Then add a little oil and fry for 7-10 minutes. Cool before adding to salad.

4. Divide the cheese in half. Grate one half on a coarse grater, and the other on a fine grater.

5. Combine these ingredients and coarsely grated cheese in one salad bowl. Leave some carrots for decoration. Salt and add pepper. Season with mayonnaise and mix.

6. Place in the center with a flat plate and, using a spoon, form into a pear shape.

7. Its elongated part will be the head, and the round part will be the body. Decorate the head with grated small cheese, and lay out the “spines” with Korean carrots.

8. Cut the olives into slices and decorate the body. If you don't have olives, you can substitute black grapes. Make eyes and nose from whole berries or halves.

9. Cover our hedgehog with chopped herbs. If you have small salted mushrooms, you can put some on the “clearing” and the back.

It’s better for the salad to sit in the refrigerator for an hour. Such beauty awaits your guests!

3. Salad with red fish, tomatoes and zucchini

This salad won my heart from the first spoon. Extraordinarily tender and tasty - words cannot describe it. There are very few ingredients for cooking, but this is only a plus. After all, preparing it is very simple. Try it! I'm sure you will like it too!

Ingredients:

  • 300 grams of fresh red fish fillet;
  • 4 strong tomatoes;
  • 2 small onions;
  • young zucchini weighing about 200 grams;
  • 1 red sweet pepper;
  • a teaspoon of olive oil;
  • a little lemon juice;
  • a teaspoon of sesame seeds;
  • a little vegetable oil;
  • breadcrumbs;
  • dill.

Step-by-step description of the recipe:

1. Cut the fillet into cubes approximately 2*2 centimeters. Place them in a plate, pepper and add salt to taste. Sprinkle with lemon juice and add olive oil. Mix.

2. Cut the onion into large cubes.

3. Peel the pepper from seeds and chop in the same way.

4. Cut the zucchini into cubes. If you, following my advice, took a young vegetable, then you do not need to peel it. More mature zucchini needs to be peeled and seeds removed.

5. Chop the tomatoes, like other vegetables, coarsely. The middle vegetable can be divided in half, then each half into 3 parts across and once lengthwise. That is, one tomato will yield 12 pieces.

6. Roll the fish in breadcrumbs. Place in a hot oil pan and fry on each side until done. Set the fire to medium.

7. Grease a clean, dry frying pan with a drop of oil and fry peppers, zucchini, onions and tomatoes in turn over high heat. Two minutes is enough for each vegetable. In the same order, place the vegetables in a salad bowl, lightly add salt and, if desired, pepper.

You need to be careful with tomatoes while frying. Then, when other vegetables need to be constantly stirred, tomatoes should not be touched often, otherwise they will turn into mush.

8. The top layer will be tomatoes. They can also be seasoned to taste.

9. Carefully place the fish pieces, sprinkle with sesame seeds (optional) and garnish with chopped herbs.

10. The salad is ready. It can be presented to guests either warm or in a cold form. Delicious and very beautiful!

4. Festive salad with poppy seeds and chicken “Poppy Bouquet”

This cute and delicate salad will be a good compliment for a beautiful lady on her birthday. After all, women need to be given flowers. And it will be doubly wonderful if they are so tasty. The dish is very light and extremely tasty. I have never met a guest in my house who would remain indifferent to him.

Ingredients:

  • 300 grams of boiled chicken breast;
  • 3 medium tomatoes;
  • a jar of pickled champignons (preferably chopped);
  • 200 grams of cheese;
  • a little green onion;
  • 5 cherry tomatoes for decoration;
  • a couple of whole sprigs of dill;
  • 2 olives;
  • mayonnaise;
  • a teaspoon of poppy seeds.

Step-by-step description of the recipe:

1. Boil the breast and wait until it cools completely. Grind the dry meat with your hands or a knife. Place on a flat salad plate. Smooth out carefully.

2. Cover with mayonnaise “mesh”. To do this, you can use a special bottle or just a plastic bag, piercing the sharp edge.

3. Mushrooms, as I already said, are more convenient to use already chopped. If you have whole champignons, you need to chop them. Place them in an even layer on top of the mayonnaise. Do the same on top, cover with mesh.

4. Sprinkle with chopped onions and, if desired, also grease it with mayonnaise.

5. Cut the tomatoes finely into cubes. Cover the onions with them. Lightly salt and pour mayonnaise.

6. The final layer will be grated cheese.

7. Cut the cherry tomatoes into slices and arrange them in the shape of petals, as shown in the photo. Place half an olive in the center.

8. A sprig of dill will serve as the trunk. You can also tear up some greenery for decoration. Sprinkle our flowers with poppy seeds.

9. Cooking is finished. But it’s better for the salad to sit in the refrigerator for a couple of hours. After all, mayonnaise must fully saturate all layers.

The salad itself is essentially an appetizer. It can be served in portions, either separately for each guest, or in one common bowl. Then, as many as they want, everyone can take it for themselves, apply it and try it. But still, this option is now becoming more popular when one type of salad is served to each guest in portions. It is not only tasty, but also looks beautiful.


Ingredients:

  • Boiled potatoes - 2 pcs.
  • chicken fillet – 200 gr
  • pickled mushrooms – 150 gr
  • boiled eggs - 2 pcs
  • hard cheese - 70 gr
  • mayonnaise - to taste
  • salt and pepper - to taste.

Cooking method:

We wash the chicken fillet in running water, then cut it into large pieces, add salt, pepper and fry in a frying pan in vegetable oil until golden brown.


Cut the boiled potatoes into small cubes and place them on a flat dish as the first layer. Then we make a mesh of mayonnaise and lightly spread it.


Now we need pickled mushrooms, which we chop finely, place on top of the chicken and apply mayonnaise.


Now it’s the turn of the eggs, which we also finely cut into cubes, lay out and grease.


All that remains is to sprinkle the cheese grated on a medium grater on top and, if desired, decorate with herbs.

Light salad without mayonnaise “Freshness”


Ingredients:

  • Cabbage - 1/2 head
  • fresh cucumber – 3 pcs.
  • crab sticks – 200 gr
  • green onions - 3 pcs
  • vegetable oil - 60 ml
  • lemon - 1/2 pcs
  • lemon zest - 1 tsp
  • garlic - 1 clove
  • sugar - 1 tsp
  • sesame - 1 tbsp. l
  • salt and ground white pepper - to taste.

Cooking method:

Shred the young cabbage into thin strips.

We cut the cucumbers into cubes; if the skin is thick, then it is better to cut it off.

Remove the wrapper from the crab sticks and finely chop.

Cut the green onions into thin rounds and combine all the chopped ingredients in a deep bowl.

Then we make the dressing and for this you first need to peel the garlic and finely chop it.

Remove one teaspoon of zest from the lemon.

In a small bowl, combine vegetable oil, sugar, salt, ground white pepper, garlic, zest, juice of half a lemon and mix everything well.

Add the dressing to the salad, mix thoroughly and sprinkle with sesame seeds at the very end.

The salad is ready, serve!

Salad with croutons and corn: recipe with step-by-step photos


Ingredients:

  • Chicken fillet - 2 pcs.
  • corn - 2 cans
  • crackers - 2 packs
  • mayonnaise - to taste.

Cooking method:

First of all, boil the chicken fillet, then let it cool a little, and then use a knife to separate it into fibers. Place it in a deep bowl.

Then add canned corn and add mayonnaise to taste. Mix everything well.

Ingredients:

  • Chicken fillet – 250 gr
  • hard cheese - 100 gr
  • canned champignons – 150 gr

  • mayonnaise - to taste.

Cooking method:

First of all, boil the potatoes, carrots and chicken fillet until tender. Grate the potatoes on a coarse grater and place them in the salad bowl as the first layer. Lubricate it with mayonnaise.

Cut the canned champignons into small pieces, place on top and coat with mayonnaise.



Grate the carrots on a coarse grater and distribute over the chicken, grease with mayonnaise.


All that remains is to grate the cheese on a medium grater and sprinkle it on the top and sides of the finished dish.


After which we put it in the refrigerator for two hours, and then treat our household and guests.

Sunflower salad recipe with chips


Ingredients:

  • Hard cheese – 100 g
  • chicken breast – 150 g
  • olives - 15-20 pcs.
  • chicken eggs - 2 pcs
  • chips
  • mayonnaise - to taste.

Cooking method:

Boil the chicken breast and eggs until tender, then let them cool. Then cut the meat into small pieces and place it on a flat plate as the first layer. Make a thin layer of mayonnaise on top.

Now grate the hard cheese on a medium grater and sprinkle it on top of our dish.

We make a mesh of mayonnaise on top and carefully place the olives cut in half.

All that remains is to place the chips around the finished dish on a plate, along the edge, to make a salad that looks like a sunflower.

Caesar salad with chicken and croutons


Ingredients:

  • Chicken breast – 200 gr
  • cherry tomatoes – 100 gr
  • parmesan cheese - 100 gr
  • white loaf - 3 slices
  • garlic - 1 clove
  • olive oil for frying - 3 tbsp. l
  • green salad - 1 bunch.

For refueling:

  • Boiled eggs - 2 pcs
  • mustard - 2 tsp
  • olive oil - 100 ml
  • garlic - 1 clove
  • lemon - 1/2 pcs.

Cooking method:

Cut the crust off the loaf and cut it into small squares.

Squeeze one clove of garlic into olive oil for frying and fry our bread on it until light golden brown.


Separate the yolks from the whites of boiled eggs. Mash the yolks with a fork and transfer to a bowl, squeeze in a clove of garlic, mustard, juice of half a lemon, 100 milliliters of olive oil and mix well until smooth.



We divide the cherry tomatoes into quarters.


Now we begin to form the salad. Place the lettuce leaves in the bowl first. Then pour the chicken, garlic croutons, dressing, sprinkle with grated Parmesan and lay out cherry slices.

You will need:

  • beef – 0.6 kg;
  • pickles – 4 pcs.;
  • potatoes – 4 pcs.;
  • mayonnaise – 3 tbsp. spoons;
  • beets – 1 pc.;
  • salt;
  • spices.

  1. First, wash the beef, place it in a large saucepan and fill it completely to the top with cold water.
  2. Boil, add salt and continue to cook over low heat for an hour and a half until fully cooked.
  3. Then remove the beef and let it cool for a while to an acceptable temperature.
  4. Wash the beets, fill them with water in a saucepan and bring the liquid to a boil. Then reduce the heat to low and continue cooking for an hour.
  5. After this, drain the water and leave the beets to cool.
  6. Rinse the potatoes well and cook them for half an hour until they reach the desired degree of softness.
  7. Soak finely chopped onion in a mixture of water and vinegar for 15 minutes. After the specified time, drain the liquid.
  8. When the beef has cooled, cut it into small cubes. Do the same with pickles.
  9. Grate the boiled vegetables.
  10. Start laying out the salad in layers: first onions, then beef with mayonnaise and potatoes mixed with it.
  11. Then come the cucumbers and lastly the beets.
  12. To finish, decorate the appetizer with a mayonnaise pattern and herbs.

“Fox coat” with herring and mushrooms

You will need:

  • lightly salted herring – 200 g;
  • mushrooms – 150 g;
  • onion – 1 pc.;
  • eggs – 2 pcs.;
  • mayonnaise – 3 tbsp. spoons;
  • carrots – 1 pc.;
  • potatoes – 2 pcs.;
  • rast. oil – 2 tbsp. spoons.

Step-by-step preparation procedure:

  1. Boil the potatoes whole without peeling them and let cool. The eggs are boiled hard for 8-10 minutes.
  2. Chop the mushrooms. It is best to use canned or frozen mushrooms. Fry them with a little sunflower or olive oil and add chopped onion.
  3. Grate the carrots on a coarse grater and simmer lightly for up to 5 minutes. You can simply use the vegetable raw. It is important that the carrots remain crispy.
  4. Cut the herring into small cubes and mix with a small amount of mayonnaise. It's important not to overdo it here.
  5. Peel and grate the potatoes, then place them in a salad bowl. Don't compact it - just level it out.
  6. Next come eggs mixed with mayonnaise, then cooled mushrooms. They also need to be leveled.
  7. Herring is placed on top, which is sprinkled with carrots.

It is advisable to serve the salad immediately after preparation. It is not recommended to store the snack in the refrigerator for more than a day.

Layered crab salad - quick and tasty

For a pack of crab sticks you will need:

  • canned corn – 400 g;
  • three large eggs;
  • rice - a third of a glass;
  • green onions;
  • mayonnaise - how much the salad will take;
  • greenery.

Step-by-step preparation procedure:

  1. First of all, boil the rice. Rinse it and drain it in a colander.
  2. Green onions are finely chopped with a knife and mixed with mayonnaise and rice.
  3. Cut the sticks or grate them. Leave a small amount for decoration and mix the rest with mayonnaise.
  4. Rinse the corn to remove excess liquid.
  5. Boil the eggs and grate or chop with an egg slicer. Add mayonnaise to them.
  6. Start layering the appetizer. Start with rice and onions, then corn and crab sticks with eggs.
  7. Sprinkle the appetizer with grated chopsticks on top and serve to guests.

Festive salad with smoked ham

For 300 grams of ham you will need:

  • one each of carrots, pomegranates, beets and apples;
  • potatoes - 4 medium tubers;
  • eggs - a pair of large ones;
  • a couple of pickles;
  • a piece of cheese per hundred grams;
  • mayonnaise;
  • garlic clove.

Step-by-step preparation procedure:

  1. Boil the potatoes and carrots without removing the skins.
  2. Also cook the beets and let them cool to an acceptable temperature. Cooking time will take about one and a half hours.
  3. Grate the beets on a coarse grater.
  4. Cut the pickled cucumbers into small cubes.
  5. The eggs must be hard-boiled and then chopped using an egg slicer.
  6. By this time, the potatoes and carrots should have cooled down. Peel them and cut into medium-sized strips.
  7. The ham is cut into cubes, like the cucumber.
  8. Start assembling layers of lettuce in a bowl. The potatoes are put in first. Each layer is coated with literally a couple of teaspoons of mayonnaise. Follow this order: cucumbers, ham, grated apple (there is no need to put mayonnaise after it), eggs, carrots, chopped garlic, beets and pomegranate seeds.

Let the appetizer brew for a couple of hours and serve.

"Malachite bracelet" with breast

The unusual combination of fruit and chicken in this salad will leave few people indifferent.

You will need:

  • chicken fillet – 0.5 kg;
  • kiwi – 2 pcs.;
  • carrots – 1 pc.;
  • eggs – 4 pcs.;
  • apples – 2 pcs.;
  • garlic – 2 cloves;
  • mayonnaise – 250 g;
  • spoon of lemon juice.

Step-by-step preparation procedure:

  1. First, boil the fillet, carrots and eggs. Leave to cool to an acceptable temperature.
  2. Cut the chicken into small cubes.
  3. Peel the carrots and cut them into small strips. Or just rub it.
  4. Also grate the apple and sprinkle lemon juice on top to prevent it from darkening while you prepare the rest of the salad ingredients.
  5. Cut one kiwi into thin slices, which will be used for decoration, and the second into cubes.
  6. Separate the yolks from the whites of boiled eggs. Grate both parts and place in different bowls.
  7. Grind the garlic with a mortar or garlic press and mix with a small amount of mayonnaise. Add a little of it to each ingredient except the yolks.
  8. Place a round jar in the middle of the plate and start laying out the ingredients in layers in the following order: chicken, kiwi, protein, carrots, apple.

Spread mayonnaise on top of the salad, and then garnish it with grated egg white and kiwi slices.

Layered salad with smoked chicken, prunes and cheese

You will need:

  • smoked chicken – 300 g;
  • 3 large eggs;
  • good prune pulp;
  • a couple of pickles;
  • walnuts – 80 g;
  • a block of cheese per hundred grams;
  • mayonnaise.

  1. Shred the chicken and cut the meat into small cubes.
  2. Grind the nuts in any convenient and familiar way for you into fine crumbs.
  3. Boil the eggs and separate the whites from the yolks. Grate them and place them in separate bowls.
  4. Grate the cheese on a fine grater.
  5. Cucumbers are cut into cubes.
  6. Rinse the prunes and soak them for 5-10 minutes in warm water to soften and swell. Cut it into small strips afterwards.
  7. Start laying out the appetizer in layers, coating each layer with mayonnaise. Follow the order: chicken, egg white, prunes mixed with nuts, cucumbers and yolk.

On top you can decorate the appetizer with herbs and pomegranate seeds.

Original appetizer with tuna and cheese

For a can of canned fish you will need:

  • a couple of strong cucumbers;
  • one carrot;
  • three large eggs;
  • up to 150 grams of salty cheese;
  • mayonnaise – 3 tbsp. spoons.

Step-by-step cooking process:

  1. Boil the carrots without peeling them and let them cool to an acceptable temperature.
  2. Boil the eggs.
  3. Cut the cheese into large strips or simply grate it.
  4. Do the same with the whites, place them on the bottom of the plate in which you will serve the salad.
  5. Brush the egg layer with a thin layer of mayonnaise and place the tuna, mashed with a fork, on top. It is advisable to drain the oil.
  6. Cut the cucumber into small strips - this will be the next layer of salad. If desired, you can add a little salt to it. If the vegetable is too watery, blot off excess moisture with a napkin or towel. The cucumber layer is also lubricated with mayonnaise.
  7. Next come boiled carrots, grated cheese and yolk crumbs as decoration.

Before serving, garnish with additional fresh herbs.

Classic "Sunflower" for birthday

You will need:

  • chicken fillet – 0.6 kg;
  • hard cheese – 150 g;
  • a jar of pickled mushrooms;
  • a pack of chips;
  • a pair of eggs;
  • mayonnaise – 2 tbsp. spoons;
  • olives – 200 g.

Step-by-step cooking process:

  1. Rinse the fillet and boil it in lightly salted water for half an hour.
  2. Boil hard-boiled eggs.
  3. When the fillet has cooled, cut it into medium-sized cubes.
  4. Coarsely grate the cheese.
  5. Mushrooms are cut into pieces.
  6. To prepare the appetizer, it is better to use pitted olives. Cut each into two halves.
