How often we, parents, are faced with the fact that our beloved children do not want to eat cottage cheese, although it is so useful! I would like to offer you a dessert option in two different ways that your child will love to eat. And wonderful berries will come to our aid :)

Ingredients:

  • ricotta - 350 g;
  • cream 10% - 250 ml;
  • finely ground oat flakes - 150 g;
  • honey (preferably lime) - 50 g;
  • pine nuts - 50 g;
  • strawberries - 50 g;
  • cherry - 50 g;
  • blueberries or blueberries - 100 g;
  • stevia - 2 tbsp. spoons;
  • sheet gelatin - 1 package (5 plates);
  • excellent mood - 100%!

Preparation:

First of all, we must prepare oatmeal baskets.



For this we need cereals finely ground and with a cooking time of no more than 3-5 minutes.

Instead of butter, we will have very healthy pine nuts, and instead of sugar, we will have honey.

Pour the nuts into a blender bowl and grind them until they become large crumbs.

Now add flakes to the chopped nuts and turn on the blender again. Grind the flakes to small crumbs, but not flour. I've tried grinding nuts and flakes together, but unfortunately most of the nuts survived in the process, which we don't need. They will not give oil in this situation.

We put honey in a saucepan and heat it up to about 50 ° C. Now there is a discussion that it is impossible to heat honey, they say, it becomes poison. I studied a lot of literature on this matter and for myself I concluded that honey can be heated, but not for long. In any case, heated honey is no more harmful than sugar.


Pour flakes with nuts into the heated honey and mix thoroughly. Best of all - with your hands. This will happen for sure. After that, we set aside this mixture to stand for 5-10 minutes. At this time, we preheat the oven to 200 ° C.


In the meantime, let's get to the berries. I wash everything, remove the tails from the strawberries, from the cherries - the stalks and seeds.

In principle, you can take any berries to your taste, the main thing is that they are non-acidic, otherwise the ricotta with cream will curl up! I took Chinese blueberries, fortunately, the neighbors supply us with everything :) It is very sweet :)

Using an immersion blender, break through the blueberries and strawberries together with the cherries. Of course, you can strain them through a sieve to remove the seeds and the remaining large pieces, but at the same time so many berries are translated that I feel sorry for them. Yes, and no one is outraged at me, so we leave it that way.


Our "dough" in molds

Now comes the most difficult stage in the whole preparation: to put our "dough" into beautiful molds. This will not be entirely easy, because the flakes tend to crumble. But we have set a goal to do this and are moving towards it.

As you can see, everything is quite possible! We send our baskets to the oven for literally 5-7 minutes, no more.


Soak gelatin in cold water, set aside.


Now let's start preparing the main product: ricotta. Of course, you can take ordinary cottage cheese, but I like ricotta better: it is softer, softer and almost odorless. And it costs, at least in Vladivostok, cheaper than cottage cheese.

Instead of sugar, I use stevia, it is its natural substitute, which is 5 times sweeter and has no calories! I will add the stevia only to the ricotta, but more, then mix with the rest of the ingredients and it will be just right!


Add stevia and 50 ml of cream to the ricotta so that everything is good and easy to break through with a blender.


This is the mass we should get.


Meanwhile, the baskets were ready. True, I had a small incident: the kid quietly, behind my back, turned on the grill, so in 5 minutes the baskets were too brown.
But, fortunately, they did not burn out :)


Now we divide our ricotta into 3 equal parts, 2 of which we put in the ground berries. Mix very well.


In a bowl, where we have only ricotta, we pour so much cream so that the mass in density becomes the same as the blanks with berries. Mix well.


Now pour the remaining cream into a saucepan, heat, but do not boil, and dissolve the gelatin there until it is completely dissolved.


We divide the cream and gelatin equally between our three blanks. Mix thoroughly.

In the baskets that we took out of the molds, we put just ricotta on a tablespoon ...

... then a spoonful of curd billet with blueberries and billets with strawberries and cherries ...

... finish off with a teaspoon of ricotta.


Now let's make a second interpretation of our dessert: lay out the remaining curd and berry blanks one by one on the bowls.

The main thing is to get into the middle, then a beautiful pattern will form. We remove our desserts for an hour - one and a half in the refrigerator, covered with cling film.


Time has passed, you can serve it to the table! The baskets are soaked in curd and berry cream and become soft and tender, but at the same time they keep their shape perfectly!

We didn't use a single gram of sugar or butter, just wholesome ingredients! try it, your kids will definitely like this dessert! And not only for kids! :)

Cooking method

Cottage cheese with fruit, the recipe for which I will now tell, is made incredibly quickly and easily. We take homemade cottage cheese (this is important, such cottage cheese is much tastier, healthier and not so crumbly, which, in this case, is good!) Add sour cream or cream to the cottage cheese and rub butter on a grater. Of course, do not add butter if you are losing weight, but if you just keep yourself in shape, but that's okay, it tastes much better with it!


You can, in fact, use purchased children's curd, but I like to cook it myself, it's not at all difficult, as you can see, and it is definitely much tastier. Checked personally 😉 By the way, curd mousse for children who do not recognize curd (I once was like that)) is a lifesaver! They won't even understand that curd cream mousse is made from curd! And they will definitely appreciate mine. ! They are really perfect, I am not dissembling and I am not bragging, I just, after a long search for perfection, came up with a magical recipe for cheese cakes, in which cottage cheese looks like a piece of heavenly cloud 😀 We fill everything with powdered sugar or natural sweeteners of our choice and take out a blender.
Curd mousse in a blender is prepared in a minute, I personally use an immersion, much less dirty dishes in the end. Put the immersion blender in a bowl and grind everything very well until completely homogeneous.
Depending on how much sour cream or cream you put in, the consistency of the curd cream will change from thinner to harder. Very soon I will use such a delicate curd-sour cream for another incredibly tasty dessert - for curd cake or cheesecake... This curd mousse is great for cake! But more on that later. Now is the time to add the fillings. The first thing you can put is nuts. I really love cashews, but you can use any. For example, walnuts are healthier, but for some reason I can't eat them. We put them in a bag and hit them, for example, with the bottom of a glass.
Pour into and mix. If you want chocolate mousse, add cocoa brewed in a glass here. hot water(just cool down first!).
Now it's time for serving. I'll show you several options. In the first, you need to prepare the berry sauce. I'll make lingonberry sauce, but now you can make both strawberry and raspberry sauce. Seasonal berries are great, but frozen berries will do just fine. We put them in the grinder, sprinkle with powdered sugar and grind well.
Now we take ordinary glasses and begin to lay out the beauty. You can put all the curd cream mousse at once, and then pour over the berry sauce, or you can make it a little more beautiful. Put a couple of tablespoons of a delicious dessert made from cottage cheese and nuts.
Put a couple more tablespoons of berry sauce on top, and then curd mousse again.
Pour another spoonful of berry sauce.
And sprinkle with chopped nuts.

The first version of a dessert made from cottage cheese with fruit or cottage cheese mousse with berry sauce is ready. The second option is to put these very berries into the curd mousse with berries initially. I chose blueberries for this, because, firstly, they are very tasty, and secondly, their ability to color is amazing. Mix the blueberries well with the curd mass, it will become very beautiful, lilac in color!
The third option, my favorite, is strawberry, banana and peach curd mousse. In general, cottage cheese with banana is a magic combination. However, as with other fruits and berries. It's just that the strawberry dessert with cottage cheese is gorgeous too. Again we take the required number of glasses and put 1 tablespoon of curd mousse in each one.
We wash the fruit and cut the strawberries into halves and the banana into slices. Lay out a layer of banana, then a layer of strawberries.
I personally sprinkle the top with flaxseeds, because they are very healthy and rich in omega-3, and flaxseeds in desserts are generally delicious!
Put another spoonful of sweet curd on top.
Cut the sweet peach or nectarine into slices and lay out another layer of fruit.
